After a night in the Car, we decided to splurge for a motel.

I loved that the free breakfast had grits instead of oatmeal (I don’t really like grits, but that’s not the point!)

Vimala’s Curryblossom Café

The joy of finally eating at Vimala’s Curryblossom Cafe is great! These are truly some of the best people on earth. Vimala and her family are generous and tirelessly work for social justice.

It nourished my body and my soul to spend time with these lovely friends again.

It’s amazing how much I missed North Carolina. Mike says it’s his favorite place so far. We had to leave Duncan and his lovely family. Now we are sitting at Vimala’s Curryblossom Cafe (our new favorite place) Vimala is the mother of my dear highschool besty Manju. I was so blessed to know these beautiful people and to eat Vimala’s wonderful food. At the time she vunteered her wonderful talent to feeding people in need, now she owns a lovely Indian cafe and still feeds everyone regardless of their ability to pay. How did I stay away so long!

So Happy to be back in North Carolina! So many wonderful adventures with wonderful friends 🙂 What a happy vacation. It makes all this sleeping in the car worthwhile… Especially when we get to couch serf from time to time.

Road Schooling

We may just be crazy enough to do this… Who wants to host this wild family and our mini RV? We made this map with all our friends in mind. Hoping to see most of you! And Vimala’s Curryblossom Café. We plan to leave tomorrow or Monday…

Our little prius is a road eater, she is so excited you can (almost) her her engine!

Any suggestions on places to stop along the way would be great. We have a limited time to make our Napa reservations… so it’s a tight trip, but we are flexible along the way.

Raw (almost) Banana Ice Cream

To me, this is haven. My family, sunshine, music and delicious vegan banana ice cream. These cones are not raw 🙂 but they are gluten-free. We make the ice cream by blending frozen bananas with some vanilla and chocolate chips. SO yummy.
